de Quay is the realization of a dream for Chef/Owner David de Quay. This dream extends back to David’s early childhood wishes to become a Chef, and wonderful memories of his first taste of Dutch cooking from Oma’s garden, and her kitchen in Holland. Throughout his career, the idea of opening his own unique restaurant remained in the background, until the opportunity to do so finally came to fruition.
He is pleased to see the dream realized in the creation of de Quay Restaurant, an extension of his Dutch family heritage, and the melding of the long history between the Netherlands and Indonesia. His goal is to introduce a unique concept which integrates the two cuisines in a contemporary, understandable, flavor- focused way. The foundations of this dream are a comfortable and pleasurable guest dining experience, an excellent beverage program created to pair with the seasonal menu, friendly, attentive service, and casually elegant, warm surroundings.

Chef / Owner
This dream extends back to David’s early childhood wishes to become a Chef, and wonderful memories of his first taste of Dutch cooking from Oma’s garden, and her kitchen in Holland. His culinary education began at Michigan State University’s School of Hotel and Restaurant Management, continued as an apprentice in the European brigade system at The Greenbrier Hotel, and finished recently with the program at the French Pastry School. The career path led his passion for cooking to many excellent kitchens, including those of The Ritz Carlton Hotel Company, The Willard Hotel, Gordon Restaurant, Rhapsody Restaurant, staging at The River Cafe, the University Club of Chicago, and finally as Executive Chef at Hinsdale Golf Club. Throughout his career, the idea of opening his own unique restaurant remained in the background, until the opportunity to do so finally came to fruition. General Manager / Wine Director
A native of Oak Park Illinois, Terry McNeese has over 20 years experience in Chicago fine dining restaurants. Terry began his restaurant career at the Iconic Bistro 110 in Streeterville. As the General Manager and Beverage Director of Le Lan Restaurant, Chicago Magazine’s best new Restaurant of 2004, Terry directed the wine program, receiving awards from the Wine Spectator and Wine Enthusiast. As Director of Operations at the Gage , Terry opened the Gage’s Sister restaurant Henri, which received Three stars from the Chicago Tribune as well as being included in the top 25 new Restaurants in Chicago Magazine. As a certified Sommelier, Terry is excited to oversee the Beverage program at De Quay-“I’m looking forward to working with David to build a small but well-curated wine list that will focus on authenticity as well as affordability.” Terry lives in the Lakeview neighborhood with his wife Karen. In their free time, the couple share their passion for traveling, dining and always, wine
Bartender Noel Catrambone joins us with a menu of creative, contemporary, well-balanced house cocktails to compliment the cuisine here at de Quay. The menu places an emphasis on Gin and Genever, and makes sure to accommodate all tastes. Noel is excited to be offering an all-craft spirit selection, and an eagerness to share some wonderful new products with our guests.
